Aulis Phuket Awarded Michelin Star
Aulis Phuket, our 15-seat chef's table in Phuket, Thailand, has been awarded a Michelin Star, less than a year after opening.
I am so proud of my team there - Charlie, Arsen and Kenika. And, of course, Oli Marlow, who keeps it all in check.
Phuket is worlds away from our home in Cartmel, with an entirely different climate and terrain, meaning we have been experimenting with ingredients that are largely new to us. Finding similarities and nuances in flavour is what has made it so exciting, and we haven’t even scratched the surface.
Since opening, my team have been pushing the boundaries of farm-to-table dining, spending days off searching for local growers and suppliers who share our philosophies and creating a menu that truly champions Thai produce.
